Ingredient Overview
Xylooligosaccharides are short chains of xylose made from xylan. Chain length is a central part of their description, which is why the specification distinguishes different degrees of polymerisation.
The short xylose chains distinguish XOS from fructan-based ingredients such as inulin. Different preparations contain different proportions of chain lengths. In food development, this carbohydrate composition is relevant alongside concentration and physical form when building an oligosaccharide-containing recipe.
