Barley contains beta-glucan in its grain cell walls. Concentrating this component produces a cereal-derived fibre ingredient distinct from whole barley flour or young barley grass powder.
Barley beta-glucan is sourced from highland barley grain. The mature grain supplies the cereal beta-glucan fraction used in this ingredient. Its water-related behaviour makes texture an important part of formulation work. It can be considered in fibre-containing foods where a concentrated barley component is preferred to adding the full grain flour.
