Stevia leaves contain intensely sweet compounds known as steviol glycosides. Concentrating them gives a sweetening ingredient used in small amounts alongside the other components of a food or drink recipe.
These compounds provide intense sweetness, so they are used differently from bulk ingredients such as ordinary sugar.
