Matcha Powder

Ingredient Overview

Matcha is finely milled green tea made from Camellia sinensis leaves and traditionally associated with Japanese tea culture. The powder brings green colour, tea flavour and leaf solids to a recipe, giving it a different texture from an instant tea extract.

For lattes, bakery products and desserts, the best choice depends on how the tea tastes alongside the other ingredients. Culinary and ceremonial options are listed here; comparing samples in the intended recipe helps establish the right balance of flavour, colour and cost.

Sourcing & Formulation Notes

Choosing matcha for a latte or food product

Start with the finished recipe. A matcha that tastes balanced in water may taste quite different with milk, sweeteners or cocoa. Compare samples at the same inclusion level in your actual base, checking flavour, colour and mouthfeel before choosing a grade.

Sampling and storage

Use the same preparation method for each sample: sift the powder, disperse it in a small amount of liquid, then add the rest of the recipe. Keep opened samples tightly sealed and protected from heat, light and moisture so storage does not distort the comparison.
