Maltitol is a polyol made from maltose. It supplies both sweetness and bulk, supporting food formulations in which sugar contributes more than taste alone.
Maltitol can contribute many of the solids needed in a sweet food while also providing sweetness. This makes it relevant to chocolate-style confectionery and other recipes in which texture depends on more than flavour alone. The crystalline format can be blended with other dry ingredients before processing.
