Erythritol is a fermentation-produced polyol. It supplies crystalline bulk as well as sweetness and is often used alongside more intense sweeteners in reduced-sugar formulation work.
The crystals contribute a physical bulk that intense sweeteners cannot provide on their own. Erythritol can be explored in confectionery, bakery and drink formulations, often as part of a sweetening blend. Its cooling sensory effect and crystallisation behaviour are useful considerations when developing the finished texture.
