Golden oyster is a cultivated oyster mushroom distinguished by its yellow caps. It is also of interest as a source of ergothioneine, a naturally occurring compound found in mushrooms.
Golden oyster extract is made from Pleurotus citrinopileatus fruiting bodies. The bright caps distinguish golden oyster from the more familiar grey oyster mushroom. Its fruiting bodies provide both beta-glucans and naturally occurring ergothioneine, giving the ingredient more than one compositional point of interest. A dry extract brings these characteristics into mushroom-based formulation work.
