Agaricus blazei is commonly called the Brazilian mushroom. Known botanically as Agaricus subrufescens, it is an edible mushroom used to produce both whole-mushroom powders and concentrated ingredients.
This mushroom connects an established edible species with the development of concentrated fungal ingredients. Its fruiting bodies are the starting material, with polysaccharides and beta-glucans central to the extract’s composition. It can sit alongside more familiar mushrooms in a multi-species blend or provide the identity for a single-mushroom formulation.
