Oyster mushrooms are named for their broad, oyster-shaped caps. They are widely cultivated as food in Asia and Europe, and their fruiting bodies also provide glucans for extracted ingredients.
The edible fruiting bodies supply both a familiar food identity and the fungal cell-wall material from which glucans are extracted. Oyster mushroom ingredients can therefore be developed around more than their culinary flavour. The dry extract offers a compact way to include this species in mushroom powders and capsule concepts.
