Garcinia gummi-gutta is a tropical fruit whose rind is used as a souring ingredient in regional cooking. Hydroxycitric acid, or HCA, is the characteristic acid used to standardise its rind extracts.
Garcinia cambogia extract is made from Garcinia gummi-gutta fruit peel. The rind gives this fruit its traditional role as a souring material. Its hydroxycitric acid content is also central to concentrated extract production.
