Cellulose is a structural component of plant cell walls. Powdered food grades supply insoluble fibre and can contribute bulk and physical structure without dissolving like sugar.
The finely divided plant material remains insoluble, giving it a physical role in a recipe. It can contribute fibre solids, bulk and structure in bakery and other food systems. Its usefulness comes from this particle-based behaviour, which is different from the dissolved texture of a gum or soluble sweetener.
