Cauliflower mushroom takes its name from its densely folded, cauliflower-like fruiting body. It is an edible fungus with a distinctive appearance and is also used as a source of mushroom polysaccharides.
Cauliflower mushroom extract is made from Sparassis crispa fruiting bodies. The many folds of its fruiting body give cauliflower mushroom a distinctive culinary identity. Its use as an extracted ingredient centres on the polysaccharides within that material. It can add species diversity to mushroom formulations while retaining a clear connection to an edible fungus with a recognisable form.
