Grape seeds provide a concentrated source of grape polyphenols, including proanthocyanidins. Extracting the seeds makes use of a part of the fruit that is usually separated during juice or wine processing.
The seeds are a useful source of polyphenolic compounds even after the fruit has supplied juice or wine. Proanthocyanidins form one group within this composition. Seed extraction therefore gives a further use to a familiar fruit crop and produces a botanical ingredient with a different character from grape juice powder.
