Ingredient Overview
Goji berries are familiar in Chinese food and herbal traditions, where they are also known as Gou Qi Zi. The fruits are used dried, in drinks and as the source of extracted polysaccharide ingredients.
The dried fruit is familiar in soups, infusions and other traditional preparations. Extraction changes the focus from the chewiness and taste of the whole berry to constituents such as polysaccharides. Goji therefore connects a recognisable food ingredient with a concentrated botanical format.
