Beetroot is a widely cultivated food crop with a distinctive earthy character. Betalain pigments produce its vivid colour and form the marker for the standardised extract grades.
The deep red-purple appearance is one of beetroot’s most recognisable features. Its betalains belong to a different pigment family from the anthocyanins found in many berries. This gives beet-derived ingredients a distinctive compositional character as well as a familiar connection with vegetable-based foods.
