Globe artichoke is a Mediterranean crop best known for its edible flower buds. Herbal extracts use the leaves, which contain a different mixture of constituents from the part served as a vegetable.
Artichoke has two very different ingredient stories: the flower bud familiar as food and the leaves used for herbal extraction. The leaf fraction supplies phenolic compounds such as caffeoylquinic acids. This helps explain why a leaf extract has a different focus from powdered culinary artichoke.
