Lemonade is a useful place to begin a sweetener trial because there is no dough structure or baking step to complicate the comparison. Lemon juice, water and allulose let you focus on the balance between acidity and sweetness.
Use crystalline allulose for this formula. Do not replace it gram for gram with an allulose syrup or a blended tabletop sweetener.
Still lemonade with crystalline allulose

Method
- Take 80 g from the measured water and warm it gently. Stir in the allulose until the crystals are no longer visible.
- Add the remaining 340 g water and the strained lemon juice. Stir thoroughly.
- Chill, then taste before adding ice. Record any adjustment in grams.
- Divide between two glasses and serve. If adding ice, assess the dilution as the drink stands.

A restrained starting point
The 500 g batch below contains 30 g of allulose, or 6% by weight. Using the approximate 70% relative sweetness reported by Tate & Lyle, that corresponds to roughly 21 g of sucrose in a simple sweetness calculation. Actual preference will depend on the lemon juice and serving temperature.

How to compare three sweetness levels
Make a small reference batch before changing the formula. For a structured comparison, hold lemon juice at 50 g and prepare batches with 25 g, 30 g and 35 g of allulose. Use 425 g, 420 g and 415 g of water respectively. Each batch still weighs 500 g.
Chill all three to the same temperature and taste them in plain, coded cups. Ask whether the drink is pleasantly tart, too sharp or too sweet. Do not tell tasters which cup contains more allulose until they have made their notes.
If every version is too tart, run a separate comparison with less lemon juice. Changing both the juice and allulose at the same time makes it harder to identify the useful adjustment.
Ice is part of the serving plan
The formula is for still lemonade before ice. Adding a large handful of ice will dilute it as the ice melts. If this is intended for a café menu, assess it in the actual glass with the planned amount of ice.
For a sparkling version, first trial replacing a portion of the chilled water with plain sparkling water. Mix the sweetened lemon base before adding the sparkling water, and stir gently. Do not try to dissolve powder by vigorously whisking a finished carbonated drink.
Keep recipe claims modest
This recipe contains lemon juice and has not undergone nutrition analysis. Avoid describing the finished drink as zero sugar, calorie-free or suitable for treating a health condition just because allulose is the sweetener.
Make the trial with food-grade ingredients, refrigerate it promptly and use it for immediate evaluation. The formula has no validated commercial shelf life. A packaged drink requires its own process, packaging and stability work.
What an ingredient buyer should record
Save the allulose grade, lot number, lemon juice source and tasting notes alongside the formula. If you change suppliers, repeat the same small batch before scaling up. For a syrup quotation, request the solids content and allulose content on a dry basis so the replacement calculation uses the right numbers.
